This is my first time buying from Baja Fresh and probably my last. I was just curious to check it out. What’s good about Baja Fresh is that they don’t use lard. The main meatless ingredients in Mexican cuisine include cheese, rice, and beans. I get tired of cheese and beans REAL fast. I know I don’t like Mexican food but I couldn’t help myself. I kept staring at the photos on the take home menu my roommate brought home. It looks so tempting. I figured I’d finally go or else I’ll just keep wondering about Baja Fresh.

I got the grilled veggie burrito ENCHILADO STYLE which means they add salsa and a crap ton of cheese on top. No one should ever eat all this in one sitting unless they are an intense athlete because this baby totals up to be approximately 1,430 calories!!!!! OMGGGG  :shock:

I ate 1/3 of it and had my roommate eat the other 2/3. I actually thought she was only eat another 1/3 but she ended up going back for seconds and ate the rest. LOL, fine by me! She’s one of those people who can eat, eat, eat, doesn’t have the stamina to endure simple aerobic activities, and yet manages to be size 00. :vangry:

My roommate wanted to replicate a dish she had at a vegetarian restaurant so I didn’t make this :P I made the name up. It’s really good, I just don’t like the sauce.


Cutting the fried “fish”. It can be found at the frozen food section at Chinese markets.


Peanuts and fried onions for garnish


Rice noodles, “fish”, peanuts, fried onions, romaine lettuce, and mint on top of a nori sheet.

Dipping in a prepackaged vegetarian fermented dipping sauce. Too spicy for me! :cry:

Burger King sells Gardenburgers, as does Red Robbin. The Burger King one isn’t all that great while the one from Red Robbin is okay. I prefer to make my own though because I think my burgers are better! My favorite patty is the original grillers from MorningStar Farms. It’s not vegan, but there are other patties that are. I throw it in a small oven at 450 degrees F for 15 minutes.


Tomato, pickles, romaine lettuce (I prefer iceberg for burgers but I had leftover romaine from another meal), mustard, ketchup, Smart Beat mayonaise (only 10 cal per tbs. Nayonaise is a vegan alternative but I think it tastes too sour), in a toasted wheat bun with potato rounds on the side.

Here’s a Gardenburger meal I got at BK last year or something. Wimpy, wimpy, wimpy! I admit BK makes the best tasting fries though.

One of my favorite vegetarian instant noodles!

I always cook my instant noodles over a stove top because I think it tastes better. I also added enoki mushrooms which adds sweetness to the broth.

Not only is my favorite flower, the lotus flower, beautiful and transcends from the murky waters to the light, the root is also edible!

It takes a while to cook. The lotus root has to be cut, thoroughly cleaned, and boiled for about 1-2 hours depending on heat settings and taste. I added mushroom, scallions, and mushroom seasoning powder for flavor.
